How to prepare a meat slice:

Shatita meat is one of the most popular dishes in the countries of the Arab Maghreb, and the most famous country is Algeria;where the Algerians are mastered in preparing them in their own way, but with different substances according to their desire to eat.

Prepare the meat slice:

The ingredients:

  1. A kilogram of cut meat, cut into small pieces, free of bone, from beef or lamb.
  2. Seven cloves of garlic.
  3. Two onions, medium in size.
  4. Two tablespoons of tomato paste.
  5. 1 large tomato, finely chopped.
  6. Two cups of chickpeas, soaked.
  7.  teaspoon of salt.
  8. A quarter cup of olive oil.
  9. Two horns of green chili pepper.
  10. A teaspoon of black pepper.
  11. A teaspoon of red pepper. Two tablespoons of parsley, finely chopped.
  12. Two tablespoons of green coriander, finely chopped.

How to prepare:

  •  Put olive oil over medium heat in the cooking pot, and add the amount of garlic and onions after they are cut very softly, and stir them for several minutes until the onions begin to wither.
  • Put the amount of meat cut into small pieces, then add salt and pepper of all kinds, also add cumin and spices to the mixture, and stir the mixture until the meat changes color, and the water outside it dries.
  • Lay the chopped tomato, and stir the mixture together for two minutes.
  •  Cover the pot after reducing the fire under it, and prepare the tomato paste mixture; mix it with two cups of water and leave to boil for two minutes on high heat, then add the solution to the mixture in the pot. Leave the pot until the mixture is cooked for fifteen minutes, in the meantime put the chickpeas soaked in a pot containing boiling water to boil the chickpeas.
  • After the specified time has passed, the boiled chickpeas are added to the stove, stir well, then stir the mixture, and it is cooked again for twenty minutes. The dish is poured into serving dishes, sprinkled with chopped coriander and parsley, and the meat slice is eaten with bread or fork.

Preparing the meat slice with ghee:

The ingredients:

  1. Seven hundred grams of veal cut into large chunks.
  2. Two cups of boiled chickpeas. Large onion, finely chopped.
  3.  Head of crushed garlic.
  4. A tomato, large size, and pureed.
  5. A century of dried red pepper.
  6. Half a tablespoon of Ras El Hanout spices.
  7. 1 tablespoon of paprika.
  8. 1 tablespoon of tomato paste.
  9.  teaspoon of salt.
  10. A teaspoon of black pepper.
  11. Tablespoon of olive oil.
  12.  Two tablespoons of municipal ghee.
  13.  Water.

How to prepare:

 Mix mashed garlic with crushed red pepper in a bowl, and flavor the mixture with salt, black pepper, spice of the shopkeeper and paprika. Mix ingredients well, then add some drops of water until they become a soft sauce.
Grease the pieces of meat with the prepared sauce, leave it steeped for a while, and keep the rest of the amount of the sauce.
Heat olive oil and ghee in a saucepan over medium heat, then add chopped onions, cut meat and the rest of the sauce.
Stir the ingredients slightly together, then add the chickpeas with mashed tomatoes and tomato paste.
The ingredients are immersed in water and then the pot is covered, the heat of the fire is reduced when boiling, and the pot is left on a very quiet fire for an hour until the ingredients are cooked. Pour the sashita into a serving bowl, and serve with the local bread.
